Homemade Wedges, served with chilly mustard mayonnaise
Ingredients: 8 Potatoes (red rascals I used) bread crumbs tumeric paprika moroccan seasoning chicken salt mayonnaise (I only ever use whole egg mayonnaise) chilli's (fresh or paste) whole grain mustard 1 clove of garlic
1.
first off we gonna make the chilli mayonnaise so get a good amount of
whole egg mayonnaise and put in a bowl to this add the crushed garlic,
whole grain mustard, chilli paste and whisk up in a blender add some
salt and pepper to taste.
2. Now to the wedges get ya spuds and cut into wedges (obviously )
now there is 2 ways you can do this you can throw them in a steamer and
cook till soft and then do the coating and then bake in oven, but I
just use the oven at about 220c.
3.
Now you have ya wedges cut get a plastic bag and into the bottom add
about 3/4 cup bread crumbs and about 2tsp each of the tumeric, paprika
and moroccan seasoning. Put all your wedges in there and give a good
shake so that they are well covered.
4. Lay these out in a single layer on a greased baking tray and bake for about 20-25 minutes turning once.
Now thats about it. Another good option is some salsa, sour cream and chopped spring onions on top
And also another thought is serve a second sauce, paul newmans ranch dressing is frickin awesome on these babies
ENJOY!!!!!
