Chinese Spiced Chicken

  • 2/3 cup of Cornstarch
  • 1 tbsp Chinese Five Spice Powder
  • 2 tsps of Cracked Pepper
  • 2 tsps of Garlic and Herb Salt (spices aisle in supermarket)
  • 1.5kg small Chicken Pieces (wings and drumsticks)
  • 1/4 cup of Lemon Juice
  • 1-2 tsps Chilli powder (optional, DIY Hot 'n' Spicy)
  • Olive Oil Spray

1. Pre-heat oven to 220c
2. Mix Cornstarch, Chinese Five Spice, Pepper, Chilli powder (I've used the full 2 tsps as it gives it a nice kick) and G&H Salt in a mixing bowl
3. Brush each Chicken piece with Lemon Juice and spray with Olive Oil
4. Coat lightly with Cornstarch mixture
5. Place the Chicken on a rack over a baking tray
6. Bake for 30-40 minutes or until golden and crisp
7. Spray again with Olive Oil at about the 15-20 minute mark
8. For a healthy option serve with a light green salad or mashed potato
9. Enjoy
